Pumpkin Chili

The weather finally turned cool this week and I personally felt the need to mark the passing of summer with the MOST possible fall-like meal ever: Pumpkin Chili. Everyone in our family gobbled it up! I hope you’ll try it soon and let me know what you think of it.

When the overwhelming urge to add pumpkin spice to everything meets the classic fall chili recipe, you get this tasty and super simple Pumpkin Chili.

 1 lb ground beef
 1 lb italian sausage
 16 oz white beans
 16 oz dark kidney beans or black beans
 16 oz can pumpkin, pure
 5 cups tomato juice or V8 vegetable drink
 12 oz can diced tomato
 5 oz can green chilis
Chili Seasoning
 4 tbsp pumpkin pie spice
 1 tbsp brown sugar
 1 tbsp chili powder
 3 tsp cumin
 ¼ tsp red pepper flakes
 ¼ tsp garlic powder
 ¼ tsp onion powder
 1 tsp salt
 ¼ tsp pepper

In a large pot over medium heat, cook meat until brown and drain.

Stir in chili seasoning and let cook for four minutes, just until spices are incorporated.

Add remaining ingredients. Simmer on the stove for 1 hour or in a crockpot for two hours on high.
